A classic recipe when making Pico de Gallo.  I’d been using basic ingredients but always felt like it was missing something.  Recently I shared the recipe with a friend, and she asked what type of onion I was using.  Thinking about it, I said “whatever’s available; red, green, yellow…”  At that point she mentioned, if I want authentic tasting Pico, I should use White Onion instead of the others.  The next time I made Pico, I used White Onion and quickly realized that’s what had been missing.  I also used a fresh Bell Pepper in this recipe, it adds a great pepper flavor without the heat and extra freshness in almost every bite.
